The ultimate lemon slice recipe

With a buttery base, a rich lemon filling and a dusting of icing sugar, this lemon slice dares you to try to stop at just one square.

Lemon slice takes the cake when it comes to easy dessert recipes and, thanks to a zesty lemon filling and buttery base, these lemon bars are particularly addictive! Taking only half an hour to bake, they’re perfect to whip up for impromptu gatherings. Top with icing sugar for an extra sweet finish.

Preheat oven to 180°C. Grease and line the base and all sides of a 26cm x 17cm (base measurement) slice pan with baking paper. Put flours, sugar and butter in a food processor and process until breadcrumbs form. Add just enough water while processing until mixture begins to form a ball.

Knead lightly on a floured surface until just smooth. Roll dough out into a rectangle big enough to fit the base of pan. Lift into pan and press firmly into sides and corners. Refrigerate for 30 minutes. Bake for 15 minutes only until pale golden. Set aside to cool slightly.

To make lemon filling, reduce oven temperature to 160°C. Whisk eggs, sugar, zest, flour and juice in a large bowl until smooth. Pour over cooled base. Bake for 17-20 minutes or until just set but not coloured on top. Allow to cool completely before cutting into squares. Dust with icing sugar just before serving.

You can store the leftover slice in the fridge, in an airtight container, for up to three days.
